Here is a recipe to one of your favorite snacks of all times, Samosa. I know some of you would have already knew how to prepare samosa but this blog post is for those who would like to learn making popular dishes of the Indian Cuisines. Here is how it goes on how to prepare samosa.

The ingredients needed are:
  • For the cover
    • A cup of plain flour (Maida)
    • 2 tablespoon warm oil
    • water (for kneading dough)
  • For the Filling
    • 2 potatoes (boiled, peeled and mashed)
    • 1 onion chopped finely
    • 1/2 teaspoon of crushed garlic
    • 1/2 teaspoon of crushed ginger
    • 2 green chillies
    • 1 tablespoon finely chopped coriander
    • 1/2 lemon juice extracted
    • 1/2 teaspoon garam masala
    • 1/2 teaspoon turmeric powder
    • 1/2 teaspoon ground/crushed coriander seeds
    • 1 teaspoon red chilli powder
    • Oil for deep frying
    • Salt to taste

Preparation Method

Dough preparation: Take the flour in a large bowl, make a well in it and add oil, salt and a little water. Mix them up until it turns crumbly. Add water little by little kneading the dough until its pliable. Cover up the dough with moist cloth and keep it aside for fifteen to twenty minutes. Now, beat the dough on a work-surface and knead again. Cover it again by the moist cloth.

Filling Preparation: Heat three tablespoon of oil, add garlic, ginger, coriander seeds and green chilli. Stir fry the mixture for a minute, add onion and saute it till onion turns light brown in color. Now add coriander, turmeric, salt, lemon, garam masala and red chilli powder. Stir fry the whole mixture for two minutes, add potatoes and stir for another two minutes. Let it cool and keep it aside.
Fig. How to make samosa dough

Once the above is done, you can proceed with the following:
  • Make flat, thin round dough of 5 inch diameter
  • Cut it into two halves
  • Run a moist finger along the diameter, join and press together to make a cone (as given above in the picture)
  • Put a tablespoon of filling into the cone and seal the third side
  • Make five to six pieces
  • Put it in hot oil and deep fry them on low to medium flame till the dough turns light brown (if fried on high flame, samosas will turn out oily and sloppy)
  • Drain out oil
  • Serve it hot with tomato sauce (Green and red tamarind chutney is perfect)
